It’s about hot, delicious, filling fare that is simple to make and comforting to eat, so let’s get cooking!

I recently came across this East Fremantle food stylist and author of A Local Table, Kate Flower, who burst onto the creative food scene over ten years ago. She is known for supporting and working with established and emerging West Australian brands like Harvest Road, WA Potatoes and Bravo Apples. This month, Kate shares a simple and delicious mid-week meal your whole family will adore. I can’t wait to try this recipe on the weekend.

Winter Recipes

For food maven Kate Flower, the heart of every dish lies with local growers, makers and food artisans. “Supporting grassroots is always of the highest importance to me,” she says. “I love partnering with businesses who hold strong ethos, like Dirty Clean Food, a home food delivery service run by a diverse group of people. They work to reinvent the way the world grows, thinks about, and buys food for a better future for people and the planet.”

Kate created this recipe, especially for Dirty Clean Food which is super delicious and quick to whip up. “It showcases two of my favourite DCF products – regeneratively farmed chicken thighs (bone in skin on, of course) and Turban Chopsticks Korma Paste,” she says. “Save time using pre-cooked rice, and cut down on the washing up using just one pan.”

One Pan Creamy Chicken Korma

Ingregients

    • 1 large onion, halved then sliced thinly
    • 450g precooked steamed brown rice
    • 2/3 jar Turban Chopsticks, Korma Paste
    • 2 tbsp extra paste
    • 1 400ml can coconut milk
    • 4 DCF chicken thighs, skin on bone in
    • 1 punnet cherry tomatoes, (half halved and half whole)

Garnish

    • 2 stalks coriander, roughly chopped
    • 2 Lebanese cucumbers, sliced
    • Greek yoghurt

Method

  1. Preheat oven to 200℃.
  2. In a small bowl mix onion, curry paste, coconut milk and half a cup of water.
  3. Scatter the cooked rice across the base of your baking dish.
  4. Pour over the coconut curry paste mix.
  5. Place the chicken thighs across the top of the dish and nestle them into the curry sauce a little.
  6. Spoon ½ tbsp of paste across each chicken thigh and spread evenly over the skin.
  7. Pop the tomatoes in around the chicken thighs.
  8. Drizzle the chicken with olive oil and season with salt.
  9. Cook in the oven for 35-40 mins or until the chicken is cooked through.
  10. Serve scattered with cucumber and coriander.
